Vegan Kiwi Lime Chia Pudding
This tart and tangy Chia Pudding is loaded with nutrients, immensely satisfying and can be enjoyed for breakfast as well as dessert!
Prep Time: 15 minutes: serves 2
⅛ cup chia seeds
⅓ cup greek yogurt (or any Vegan substitute such as almond milk plain unsweetened yogurt)
½ cup + 1 tbsp unsweetened Almond Milk
1 tsp vanilla extract
2 tbsp cup honey or maple syrup if making vegan version
squeeze (~¼ tsp) of lemon juice
1 kiwi peeled and sliced
½ lime sliced
Add all the rest of the ingredients except Kiwi and lime and mix until combined.
Place in a bowl and cover (or use a big quart mason jar) in the refrigerator for at least 6 hours. Stir every few hours.
Serve with sliced kiwi and limes.
